Sticky BBQ Meatloaf with Roasted Potatoes Recipe

Ingredients:

For the Meatloaf:
1 lb (450g) Ground Beef (or mix of beef and pork)
1 large Egg
1/2 cup Breadcrumbs
1 small Onion, finely chopped
2 cloves Garlic, minced
1 tbsp Worcestershire Sauce
1/4 cup BBQ Sauce (store-bought or homemade)
Salt and Pepper to taste
Optional: Fresh herbs (parsley or thyme) for garnish
For the Roasted Potatoes:
1 lb (450g) Baby Potatoes, quartered
2 tbsp Olive Oil
2 cloves Garlic, minced
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Paprika
Salt and Pepper to taste
Fresh Parsley (optional, for garnish)

Instructions:

Preheat the Oven:
Preheat your oven to 375°F (190°C).
Prepare the Meatloaf:
In a large bowl, mix together the ground beef, egg, breadcrumbs, onion, garlic, Worcestershire sauce, salt, and pepper.
Shape the mixture into a loaf and place it on a parchment-lined baking sheet or lightly greased baking pan.
Spread 1/4 cup BBQ sauce generously over the top of the meatloaf.
Prepare the Potatoes:
Toss the quartered baby potatoes in olive oil, garlic powder, onion powder, paprika, salt, and pepper.
Spread the seasoned potatoes on a baking sheet in a single layer.
Bake:
Place the meatloaf in the oven and bake for 45-50 minutes until the meatloaf reaches an internal temperature of 160°F (71°C).
Roast the potatoes in the same oven for 30-35 minutes, flipping halfway through, until they’re golden and crispy.
Rest and Serve:
Let the meatloaf rest for 5-10 minutes before slicing.
Serve with the roasted potatoes, garnished with fresh parsley if desired.

Tips:

For extra crispy potatoes: Increase the oven temperature to 400°F (200°C) for the last 10 minutes of roasting.
For juicier meatloaf: Use a combination of ground beef and pork or add a bit of chicken broth to the mixture for moisture.
