8 oz cream cheese, cut into small cubes

1. Preheat the oven

2. Prepare the baking dish
Melt the butter and pour it into a 9x13-inch glass baking dish. Spread it evenly across the bottom.
3. Make the cobbler batter
In a medium bowl, whisk together the beaten egg, milk, flour, sugar, baking powder, and salt until smooth and combined.
4. Layer the batter
Pour the batter evenly over the melted butter. Do not stir. This helps create that classic cobbler texture as it bakes.
5. Add the pineapple
Scatter the drained pineapple chunks evenly over the batter.
6. Add the cream cheese
Drop the cream cheese cubes evenly over the pineapple so every serving gets those creamy little pockets.
