Zucchini Hamburger Casserole

Ingredients
1 lb ground beef
2 medium zucchini, sliced
1 small onion, diced
2 cloves garlic, minced
1 cup low-sugar tomato sauce
1 cup cottage cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Preheat the oven to 375°F and grease a baking dish.
2. In a skillet over medium heat, cook ground beef until browned.
3. Add diced onion and garlic, then cook until softened.
4. Stir in tomato sauce, Italian seasoning, salt, and pepper.
5. Slice zucchini into thin rounds.
6. Layer half of the zucchini in the baking dish.
7. Add half of the beef mixture over the zucchini.
8. Spread a layer of cottage cheese.
9. Repeat layers and top with mozzarella and Parmesan cheese.
10. Bake for 30 to 35 minutes until bubbly and set.
11. Remove from the oven and let rest for 5 to 10 minutes before serving.
Notes
Drain excess moisture from zucchini to avoid a watery casserole.
Use freshly shredded cheese for better melting.
Let casserole rest before serving for clean slices.
Store in the refrigerator up to 4 days or freeze for later.
