Strawberry Crunch
24 Golden Oreos or vanilla sandwich cookies
1 cup freeze-dried strawberries
4 tablespoons unsalted butter, melted
Creamy Cheesecake Filling
8 oz cream cheese, softened
¾ cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream, cold
Strawberry Layer
1½ cups fresh strawberries, diced
½ cup strawberry preserves or strawberry sauce
For Garnish
Whipped cream
Fresh strawberry slices
Extra strawberry crunch
Instructions
Prepare the strawberry crunch: Crush the vanilla sandwich cookies into small crumbs. Crush the freeze-dried strawberries and combine them with the cookie crumbs. Stir in the melted butter until evenly coated.
Make the cheesecake filling: Beat the softened cream cheese until smooth and creamy. Add the powdered sugar and vanilla extract, then beat until well combined.
Whip the cream: In a separate bowl, beat the cold heavy whipping cream until stiff peaks form. Gently fold it into the cream cheese mixture until smooth and fluffy.
Prepare the strawberry layer: Add the diced strawberries to a bowl and gently mix them with the strawberry preserves or sauce.
Assemble the dessert cups: Add a layer of strawberry crunch to the bottom of each cup. Pipe or spoon cheesecake filling over the crumbs, followed by the strawberry mixture. Add another layer of cheesecake filling and finish with strawberry crunch.
Chill: Refrigerate the cups for 1–2 hours before serving.
Garnish: Top each dessert cup with whipped cream, a fresh strawberry slice, and extra strawberry crunch just before serving.
Notes
Make sure the cream cheese is softened before mixing for a smooth filling.
Dry your strawberries well before chopping to prevent watery layers.
For neat, defined layers, use a piping bag for the cheesecake filling.
Add the final crunch topping shortly before serving so it stays crispy.
Keep the dessert cups refrigerated until ready to enjoy.
