Smoked Sausage and Potato Bake

A hearty combination of smoky sausage, tender roasted potatoes, sweet peppers, and melted cheese baked into a comforting meal that's perfect for busy family dinners.
Ingredients
1½ pounds smoked sausage, sliced into rounds
2 pounds baby potatoes or Yukon Gold potatoes, cut into bite-sized pieces
1 small onion, thinly sliced
1 red bell pepper, chopped
1 yellow bell pepper, chopped
3 tablespoons olive oil
2 tablespoons butter, melted
3 garlic cloves, minced
1 teaspoon smoked paprika
1 teaspoon Italian seasoning
½ teaspoon garlic powder
½ teaspoon onion powder
1 teaspoon salt
½ teaspoon black pepper
1½ cups shredded cheddar or Monterey Jack cheese
2 tablespoons chopped fresh parsley
Instructions
Preheat your oven to 400°F and lightly grease a 9x13-inch baking dish.
Add the potatoes, smoked sausage, onion, and both bell peppers to the prepared dish.
In a small bowl, whisk together the olive oil, melted butter, garlic, smoked paprika, Italian seasoning, garlic powder, onion powder, salt, and black pepper.
Drizzle the seasoned butter mixture over the sausage and vegetables, then toss until everything is evenly coated.
Spread the mixture into a single, even layer for the best roasting results.
Cover the baking dish with aluminum foil and bake for 30 minutes.
Remove the foil, gently stir the ingredients, and continue baking uncovered for 20–25 minutes, or until the potatoes are tender and lightly browned.
Sprinkle the shredded cheese evenly over the top and return the dish to the oven for 5–7 minutes, until the cheese is fully melted and bubbly.
Finish with chopped parsley and serve hot alongside green beans, a fresh salad, or warm dinner rolls. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
