Slow Cooker Sausage Potatoes & Sauerkraut

This Slow Cooker Sausage Potatoes & Sauerkraut recipe is the perfect hearty comfort meal. Smoky sausage, tender potatoes, and tangy sauerkraut cook low and slow together for an easy, flavor-packed crockpot dinner your family will love.
Ingredients
14 oz smoked sausage or kielbasa, sliced
1½ pounds baby potatoes, halved
24 oz sauerkraut, drained slightly
1 large onion, sliced
3 garlic cloves, minced
1 cup chicken broth
2 tablespoons butter
1 teaspoon paprika
1 teaspoon black pepper
Fresh parsley for garnish (optional)
Instructions
Wash and halve the baby potatoes if needed. Slice the sausage into rounds and slice the onion.
Place the potatoes in the bottom of the slow cooker.
Add the sliced onion and minced garlic over the potatoes.
Spread the sauerkraut evenly on top.
Add the sliced sausage over the sauerkraut layer.
Sprinkle paprika and black pepper over everything.
Pour the chicken broth around the sides of the slow cooker and place the butter on top.
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the potatoes are tender.
Stir gently before serving and garnish with fresh parsley if desired.
Notes
Brown the sausage before adding it to the slow cooker for extra flavor.
For a milder taste, rinse the sauerkraut before using.
Add sliced apples or a little brown sugar for a sweeter flavor balance.
Yukon Gold or red potatoes work best because they hold their shape during cooking.
