Slow Cooker Poor Man’s Ribs

Fall-apart tender beef, coated in a rich, sticky BBQ sauce with sweet caramelized onions… this is comfort food done right with minimal effort and maximum flavor.
🛒 Ingredients (Serves 4–6)
For the ribs:
2–3 lbs beef shoulder or country-style beef ribs
1 tsp salt
½ tsp black pepper
1 tsp garlic powder
1 tsp smoked paprika
For the sauce:
1 cup BBQ sauce
¼ cup brown sugar
2 tbsp apple cider vinegar
1 tbsp Worcestershire sauce
1 medium onion (sliced)
2 cloves garlic (minced)
👨‍🍳 Instructions
Season the beef
Rub the beef pieces evenly with salt, pepper, garlic powder, and smoked paprika.
Layer the slow cooker
Place sliced onions and garlic at the bottom, then add the seasoned beef on top.
Prepare the sauce
Mix BBQ sauce, brown sugar, apple cider vinegar, and Worcestershire sauce in a bowl.
Slow cook to perfection
Pour the sauce over the beef. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours until the meat is fork-tender.
Optional finishing touch
For crispy edges, transfer the beef to a baking sheet, brush with extra sauce, and broil for 3–5 minutes.
Serve hot
Spoon the rich sauce and onions over the ribs before serving.
