Ingredients
- 2 lb large raw shrimp, peeled and deveined
- 1½ lb baby red or Yukon Gold potatoes
- 4 ears corn on the cob, cut into pieces
- 12 oz fully cooked smoked beef or turkey sausage, sliced
- ½ cup unsalted butter, melted
- 6 cloves garlic, minced
- 2 tbsp Old Bay seasoning
- 1 tbsp Cajun seasoning
- 1 tsp smoked paprika
- ½ tsp black pepper
- 1 cup chicken or seafood broth
- 2 tbsp fresh lemon juice
- 1 lemon, sliced
- 2 tbsp fresh parsley, chopped
Instructions
1. Prepare Ingredients: Wash and halve larger potatoes, cut corn into sections, and slice the sausage. Thaw shrimp completely if frozen.
2. Make Garlic Butter: Melt butter and gently cook minced garlic for 1 minute. Stir in Old Bay, Cajun seasoning, paprika, black pepper, and lemon juice. Reserve one-quarter of the sauce separately for serving.
3. Fill Slow Cooker: Add potatoes, broth, corn, and sausage to a 6-quart or larger slow cooker. Pour the remaining garlic butter over everything, add lemon slices, and gently toss.
4. Slow Cook: Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until potatoes are fork-tender.
5. Add Shrimp: Stir thawed raw shrimp into the thoroughly hot mixture. Cover and cook on HIGH for approximately 15–30 minutes, checking frequently, until shrimp are opaque and reach 145°F (63°C).
6. Finish and Serve: Drizzle with the warmed reserved garlic butter, sprinkle with parsley, and serve immediately with lemon wedges.
Notes
- Shrimp: Use large or jumbo shrimp and add them only at the end to prevent overcooking.
- Spice Level: Reduce Cajun seasoning for a milder flavor or add cayenne for extra heat.
- Sausage: Smoked beef or turkey sausage adds delicious flavor.
- Extra Flavor: Serve with additional garlic butter and fresh lemon.
- Storage: Refrigerate leftovers in airtight containers for up to 3–4 days.
- Reheating: Gently reheat leftovers to 165°F (74°C).
Serving Suggestion: Enjoy with warm garlic bread, coleslaw, or buttery dinner rolls for a complete seafood feast!
