Roasted Potatoes and Caramelized Onions

This cozy side dish combines crispy roasted potato slices with rich, sweet caramelized onions for a simple yet satisfying recipe packed with comforting flavor.
Ingredients
6 medium potatoes, sliced into thin rounds
2 large onions, thinly sliced
3 tablespoons olive oil or melted butter
3 garlic cloves, finely minced
1 teaspoon paprika
1 teaspoon dried thyme
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons grated Parmesan cheese (optional)
Fresh parsley, chopped, for garnish
Instructions
1. Prepare the Potatoes
Preheat your oven to 400°F (200°C).
Slice the potatoes into thin, even rounds.
Place the slices in a bowl of cold water and let them soak for about 10 minutes to remove excess starch.
Drain well and pat completely dry with paper towels.
2. Cook the Onions
Heat 1 tablespoon of the olive oil in a skillet over medium heat.
Add the sliced onions and cook slowly, stirring occasionally, for 15–20 minutes until they become soft, golden, and lightly caramelized.
Stir in the minced garlic during the final 2 minutes of cooking.
3. Season the Potatoes
In a large mixing bowl, combine the potato slices with the remaining olive oil.
Sprinkle in the paprika, thyme, salt, and black pepper.
Toss until all the slices are evenly coated.
4. Layer the Dish
Lightly grease a baking dish.
Arrange half of the seasoned potato slices in an even layer.
Spread the caramelized onion mixture across the potatoes.
Top with the remaining potato slices.
Sprinkle with Parmesan cheese if desired.
5. Roast
Cover the baking dish with aluminum foil and bake for 35 minutes.
Remove the foil and continue baking for an additional 20–25 minutes, or until the potatoes are tender and the edges are beautifully golden and crisp.
6. Finish and Serve
Remove from the oven and let rest for a few minutes.
Sprinkle with fresh parsley before serving.
