Ingredients
3 medium beets, roasted, peeled, and thinly sliced into half-moons
2 medium oranges, peeled and segmented
2 medium avocados, pitted and sliced into thick wedges
¼ medium red onion, very thinly sliced (optional)
⅓ cup crumbled feta cheese
¼ cup walnuts, toasted and roughly chopped
2 cups mixed salad greens, such as spinach or arugula (optional)

1 tablespoon apple cider vinegar
1 teaspoon honey

Instructions
Build the Salad
