Quick Pork Sausage Tray Bake

Ingredients:

6-8 Pork Sausages
500g Baby Potatoes, halved or quartered
2 Red Bell Peppers, sliced
1 Red Onion, sliced
2 Carrots, peeled and chopped
3 Garlic Cloves, minced
2 tbsp Olive Oil
1 tsp Dried Oregano
Salt and Pepper, to taste

Instructions:

Preheat the Oven:Preheat your oven to 200°C (180°C fan) or 400°F.
Prepare the Ingredients:Wash and slice vegetables: halve or quarter the baby potatoes, slice the bell peppers and onion, and chop the carrots. Mince the garlic.
Arrange Ingredients:Place the sausages, potatoes, bell peppers, onion, carrots, and garlic on a large baking tray. Spread them out so they cook evenly.
Season:Drizzle olive oil over the ingredients. Sprinkle dried oregano, salt, and pepper to taste. Toss everything together to coat the vegetables and sausages evenly.
Bake:Place the tray in the preheated oven and bake for 35-40 minutes, or until the sausages are cooked through and the vegetables are tender. You can check the sausages with a meat thermometer (75°C or 165°F).
Serve:Remove from the oven and serve hot. Enjoy your hearty, flavorful meal!
