For the salmon
4 salmon fillets (5–6 oz each)
Salt and black pepper, to taste
1 tbsp olive oil
For the pineapple glaze
1 cup fresh pineapple, diced
β…“ cup pineapple juice
ΒΌ cup soy sauce (low sodium)
3 tbsp honey or brown sugar
2 cloves garlic, minced
1 tsp grated fresh ginger (optional)
1 tbsp lemon or lime juice
For garnish
Fresh parsley or cilantro, chopped

Preheat oven to 400Β°F (200Β°C). Lightly grease a baking dish.
Season salmon fillets with salt and pepper and place in the dish.
In a saucepan over medium heat, combine pineapple juice, soy sauce, honey, garlic, ginger, and lemon juice.
Simmer 5–7 minutes, until slightly thickened. Stir in diced pineapple.
Spoon the glaze generously over the salmon.
Bake uncovered for 14–18 minutes, until salmon is flaky and glaze is caramelized.
Spoon extra sauce over the top and garnish with fresh herbs before serving.
