Pineapple Fritters

ingredients:
- 1 (20 ounce) can pineapple rings, drained (reserve juice)
- 1 cup all-purpose flour
- 2 tbsp granulated sugar
- 1 tsp baking powder
- ¼ tsp salt
- ¼ tsp ground cinnamon
- ¼ tsp ground nutmeg (optional)
- ½ cup milk
- ¼ cup reserved pineapple juice
- 1 large egg
- 1 tsp vanilla extract
- Vegetable oil, for frying
- Powdered sugar, for dusting
- Optional: Maple syrup or honey, for drizzling
instructions:
1. In a medium bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg .
2. In a separate bowl, mix the milk, reserved pineapple juice, egg, and vanilla extract .
3. Gradually add the wet ingredients to the dry ingredients, whisking until smooth .
4. In a large skillet, heat about 1 inch of vegetable oil over medium heat .
5. Test the oil by dropping a small amount of batter into it—it should sizzle and brown quickly.
6. Pat the pineapple rings dry with paper towels .
7. Dip each ring in the batter, letting excess drip off .
8. Carefully place the coated rings in the hot oil, frying 2-3 at a time .
9. Cook for 2-3 minutes per side, until golden brown and crispy .
10. Remove with a slotted spoon and drain on a plate lined with paper towels .
11. Dust generously with powdered sugar .
12. Serve warm with optional maple syrup or honey .
