Ingredients
Graham Cracker Crust
- 2 cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 tablespoons granulated sugar
Cream Cheese Layer
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 cup whipped topping, thawed
Pineapple Coconut Pudding Layer
- 1 can (20 oz) crushed pineapple, well drained
- 2 boxes (3.4 oz each) instant vanilla pudding mix
- 3 cups cold whole milk
- ¾ cup sweetened shredded coconut
Whipped Topping
- 2 cups whipped topping, thawed
- ½ cup sweetened shredded coconut
- Fresh pineapple pieces, optional for garnish
Instructions
1. Prepare the crust: In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until evenly moistened. Press firmly into the bottom of a 9×13-inch baking dish. Refrigerate for 15–20 minutes.
2. Make the cream cheese filling: Beat softened cream cheese and powdered sugar until smooth and creamy. Gently fold in 1 cup of whipped topping. Spread evenly over the chilled crust.
3. Prepare the pineapple coconut layer: In a separate bowl, whisk instant vanilla pudding mix with cold milk for about 2 minutes until thickened. Let stand for 5 minutes, then fold in the drained crushed pineapple and shredded coconut.
4. Assemble the dessert: Carefully spread the pineapple coconut pudding mixture over the cream cheese layer, smoothing the surface with a spatula.
5. Add the topping: Spread the remaining 2 cups of whipped topping evenly over the pineapple layer. Sprinkle with shredded coconut and garnish with pineapple pieces if desired.
6. Chill and serve: Cover and refrigerate for at least 4–6 hours, preferably overnight, until the layers are firm. Slice into squares and serve chilled.
Notes and Tips
- Drain pineapple thoroughly: Excess juice can make the pudding layer watery.
- Use softened cream cheese: This creates a smooth filling without lumps.
- Chill overnight: For cleaner slices and firmer layers, refrigerate overnight.
- Add toasted coconut: Lightly toast the coconut topping for extra flavor and crunch.
- Make ahead: Prepare the dessert one day before serving for convenience.
- Storage: Keep covered in the refrigerator for up to 3–4 days.
- Variations: Substitute vanilla wafer crumbs for graham crackers or add chopped pecans for extra crunch.
Recipe tip: Use instant pudding mix, not cook-and-serve pudding, for the intended no-bake preparation. The recipe is a suggested formulation and should be tested before publication.
