Mozzarella Stuffed Bacon Wrapped Meatloaf Recipe

Ingredients
For the Meatloaf
2 lb (900 g) ground beef (80/20 for best juiciness)
1 small onion, finely chopped
3 cloves garlic, minced
2 large eggs
1 cup breadcrumbs (or crushed crackers)
½ cup milk
1 tsp salt
1 tsp black pepper
1 tsp paprika
1 tsp Italian seasoning
½ tsp onion powder
½ tsp garlic powder
2 tbsp ketchup
1 tbsp Worcestershire sauce
For the Filling
8–10 oz (225–280 g) mozzarella cheese (block or sticks)
For Wrapping
10–12 slices bacon
Optional Topping
2 tbsp grated Parmesan
Fresh parsley or basil, finely chopped
Instructions
Preheat the Oven
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a baking dish.
Prepare the Meat Mixture
In a large bowl, combine ground beef, onion, garlic, eggs, breadcrumbs, milk, salt, pepper, paprika, Italian seasoning, onion powder, garlic powder, ketchup, and Worcestershire sauce. Mix gently until just combined—do not overmix.
Shape and Stuff
Lay the meat mixture on parchment paper and flatten it into a rectangle. Place the mozzarella cheese lengthwise in the center. Carefully roll the meat around the cheese, sealing the edges to fully enclose it.
Wrap with Bacon
Lay bacon slices slightly overlapping on a clean surface. Place the meatloaf on top and wrap the bacon around it, tucking the ends underneath.
Bake
Transfer to the prepared baking dish. Bake uncovered for 60–75 minutes, or until the internal temperature reaches 160°F (71°C) and the bacon is crispy.
Optional Finish
Sprinkle Parmesan on top during the last 10 minutes of baking for extra flavor.
Rest & Slice
Let the meatloaf rest for 10 minutes before slicing to keep the cheese from spilling out.
