Meatball and Mashed Potato Recipe

A Hearty, Flavorful Dish
Ingredients:
For the Meatballs:
1 lb ground beef or pork (or a mix of both)
1 cup fresh breadcrumbs
1 large egg
3 cloves garlic, minced
1 small onion, finely chopped
1/2 cup Parmesan cheese, grated
1/4 cup fresh parsley, chopped
Salt and pepper, to taste
Optional: 1 tsp dried oregano or thyme
For the Mashed Potatoes:
2 lbs Yukon Gold or Russet potatoes
4 tbsp butter
1/2 cup heavy cream (or milk for lighter potatoes)
Salt and pepper, to taste
2 cloves garlic, minced (optional)
Fresh chives or parsley for garnish (optional)
Instructions:
Make the Meatballs:
Preheat your oven to 350°F (175°C).
In a large bowl, combine ground meat, breadcrumbs, egg, garlic, onion, Parmesan, parsley, and season with salt and pepper.
Gently mix until all ingredients are well combined. Avoid overmixing.
Roll the mixture into 1-2 inch meatballs and place them on a baking sheet.
Heat a tablespoon of olive oil in a skillet over medium heat. Brown the meatballs on all sides (about 4-5 minutes).
Transfer the meatballs to the oven and bake for 10-15 minutes, or until fully cooked (internal temperature should be 160°F).
Make the Mashed Potatoes:
Peel and cut potatoes into chunks. Place them in a pot of cold, salted water and bring to a boil. Cook for 15-20 minutes, until tender.
Drain the potatoes and return them to the pot. Mash using a potato masher or hand mixer.
Add butter and heavy cream (or milk) and mash until smooth and creamy. Season with salt, pepper, and garlic (optional).
Garnish with fresh chives or parsley if desired.
Serve:
Plate the mashed potatoes, top with meatballs, and drizzle with any leftover meatball sauce or gravy.
