Ingredients
4 large russet potatoes, baked and cut into bite-sized cubes
3 cups cooked chicken breast, diced or shredded
8 slices bacon, cooked until crispy and crumbled
2 cups shredded sharp cheddar cheese, divided
1 cup sour cream
4 ounces cream cheese, softened
4 tablespoons butter, melted
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
Salt, to taste
Black pepper, to taste
¼ cup sliced green onions, for garnish
Chopped fresh parsley (optional)
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
Bake the potatoes until fork tender. Allow them to cool slightly, then cut them into bite-sized pieces.
In a large mixing bowl, combine the sour cream, softened cream cheese, melted butter, garlic powder, onion powder, smoked paprika, salt, and black pepper until smooth.
Add the cooked chicken, potatoes, half of the shredded cheddar cheese, and half of the crumbled bacon to the bowl. Stir gently until everything is evenly coated.
Transfer the mixture to the prepared baking dish and spread it into an even layer.
Sprinkle the remaining cheddar cheese and bacon evenly over the top.
Bake for 25–30 minutes, or until the casserole is hot and the cheese is melted and bubbly.
For a golden, slightly crispy top, broil for 2–3 minutes, watching carefully.
Remove from the oven and let the casserole rest for about 5 minutes before serving.
Garnish with sliced green onions and fresh parsley, if desired.

Rotisserie chicken works perfectly and saves time.
Freshly shredded cheese melts more smoothly than pre-shredded cheese.
Bake the potatoes instead of boiling them for the best flavor and texture.
