- 1 cup powdered sugar
- 1 cup whipped topping, thawed
For the Lemon Pudding Layer
- 2 boxes (3.4 oz each) instant lemon pudding mix
- 3 cups cold whole milk
For the Topping
- 2 cups whipped topping, thawed
- 1 tablespoon fresh lemon zest
- Fresh lemon slices, optional
Instructions
Step 1: Prepare the Crust
1. Preheat your oven to 350°F (175°C).
2. Mix flour, softened butter, and chopped pecans until crumbly.
3. Press evenly into a 9 × 13-inch baking dish.
4. Bake for 15–20 minutes until lightly golden.
5. Let the crust cool completely.
Step 2: Make the Cream Cheese Filling
1. Beat softened cream cheese and powdered sugar until smooth.
2. Gently fold in 1 cup of whipped topping.
3. Spread evenly over the cooled crust.
Step 3: Prepare the Lemon Pudding
1. Whisk instant lemon pudding mix with cold milk for approximately 2 minutes until thickened.
2. Let stand briefly to set.
3. Carefully spread over the cream cheese layer.
Step 4: Add the Topping
1. Spread the remaining 2 cups of whipped topping over the lemon pudding.
2. Smooth the surface with a spatula.
3. Garnish with fresh lemon zest and optional lemon slices.
Step 5: Chill and Serve
1. Cover and refrigerate for at least 4 hours, preferably overnight.
2. Slice into squares and serve chilled.
