Lemon Bisque

Ingredients
• 2 cups graham cracker crumbs
• ¾ cup butter, melted
• 1 (6 oz) box lemon Jell-O
• 1½ cups water
• 1 (12 oz) can evaporated milk
• ½ cup granulated sugar
• Juice of 1 lemon
• Pinch of salt
Directions
Mix graham cracker crumbs with melted butter and press into the bottom of a pie dish or baking dish. Chill while preparing the filling. Dissolve lemon Jell-O in hot water and let cool slightly. In a bowl, whisk evaporated milk, sugar, lemon juice, and salt until smooth, then stir in the cooled Jell-O mixture. Pour filling over the crust and refrigerate until fully set, about 4 hours or overnight.
