Keto Reuben Casserole Recipe Card

Ingredients:

2 cups Corned Beef (shredded or sliced)
1 ½ cups Swiss Cheese (shredded or sliced)
1 ½ cups Sauerkraut (drained and chopped)
½ cup Russian Dressing (keto-friendly version)
2 slices Almond Flour Bread (optional, cut into cubes)
1 tsp Garlic Powder (or to taste)
1 tsp Onion Powder (optional)
1 tbsp Caraway Seeds (optional, for a rye bread flavor)

Instructions:

Preheat oven to 350°F (175°C).
Prepare the ingredients: Shred the corned beef and Swiss cheese. Drain and chop the sauerkraut.
Layer the casserole: Grease a casserole dish, then layer in the following order:
Corned beef at the bottom
Swiss cheese
Sauerkraut
Top with Russian dressing
Optional step: Add almond flour bread cubes on top for a “bread-like” texture (optional).
Bake for 20-25 minutes, until cheese is melted and bubbly.
Broil for the last 3-5 minutes for a crispier topping (optional).
Serve hot and enjoy!
