Cook: 1½–2½ hrs
Servings: 8–10
Course: Main Course
Cuisine: American
Cooking Method: Oven-Baked
Temperature: 325°F (163°C)
Ingredients
- 3–4 lbs boneless beef sirloin tip roast
- 1 can (20 oz) pineapple rings, drained
- ½ cup honey
- ¼ cup brown sugar
- ½ cup pineapple juice
- 2 tablespoons Dijon mustard
- 2 tablespoons soy sauce
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- ½ teaspoon ground ginger
- ½ teaspoon black pepper
- 1 teaspoon salt
- ⅛ teaspoon ground cloves (optional)
Instructions
1. Preheat the oven: Set your oven to 325°F (163°C). Pat the beef roast dry and season with olive oil, salt, and black pepper.
2. Prepare the glaze: In a saucepan, combine honey, brown sugar, pineapple juice, Dijon mustard, soy sauce, garlic, ginger, and cloves. Simmer for 3–5 minutes until slightly thickened. Divide into separate portions for basting and serving.
3. Roast the beef: Place the seasoned roast in a roasting pan and bake uncovered. Begin checking the internal temperature before the estimated cooking time ends.
4. Add the pineapple: During the final 20–30 minutes, arrange the drained pineapple rings around the roast.
5. Glaze the roast: Brush the beef generously with honey pineapple glaze during the final 15–20 minutes. Apply another layer if desired.
6. Check for doneness: Cook until the thickest part reaches at least 145°F (63°C), followed by a minimum 3-minute rest, according to USDA guidance.
7. Rest and slice: Remove from the oven and let the roast rest for 15–20 minutes. Slice thinly against the grain.
8. Serve: Arrange the sliced beef with roasted pineapple rings and drizzle with the reserved warm glaze.
Recipe Notes
- For tender beef: Avoid overcooking and always slice against the grain.
- For a thicker glaze: Simmer the reserved sauce longer or add a small cornstarch slurry.
- For extra flavor: Add orange zest or a pinch of red pepper flakes.
- Best side dishes: Garlic mashed potatoes, roasted carrots, green beans, or rice.
- Storage: Refrigerate leftovers in an airtight container for up to 3–4 days.
- Freezing: Freeze cooked portions for 2–3 months for best quality.
Nutrition: Values vary based on the beef cut, serving size, and amount of glaze consumed. Calculate using your final ingredients for accurate per-serving information.
Recipe Tip: Add most of the honey glaze toward the end of roasting to create a beautiful caramelized finish without burning the sugar.
