Ingredients• 4 tbsp butter• 1 small onion, finely chopped• 2 cloves garlic, minced• ¼ cup all-purpose flour• 2 cups chicken broth• 2 cups half-and-half (or 1 cup milk + 1 cup cream)• 3 cups fresh broccoli florets, chopped small• 1 cup shredded carrots• 2½ cups sharp cheddar cheese, freshly shredded• Salt and black pepper, to tasteDirectionsMelt butter in a pot over medium heat. Add onion and cook until soft, then stir in garlic for 30 seconds. Whisk in flour and cook 1 minute. Slowly add broth, whisking until smooth, then stir in half-and-half.
