Homemade Panera Broccoli Cheese Soup

Ingredients
• 4 tbsp butter
• 1 small onion, finely chopped
• 2 cloves garlic, minced
• ¼ cup all-purpose flour
• 2 cups chicken broth
• 2 cups half-and-half (or 1 cup milk + 1 cup cream)
• 3 cups fresh broccoli florets, chopped small
• 1 cup shredded carrots
• 2½ cups sharp cheddar cheese, freshly shredded
• Salt and black pepper, to taste
Directions
Melt butter in a pot over medium heat. Add onion and cook until soft, then stir in garlic for 30 seconds. Whisk in flour and cook 1 minute. Slowly add broth, whisking until smooth, then stir in half-and-half. Add broccoli and carrots and simmer 15–20 minutes until tender. Reduce heat and stir in cheese until melted and creamy. Season to taste.
Serve hot with crusty bread.
