Hobo Ground Beef Casserole

This Ground Beef Hobo Casserole is the kind of cozy comfort food that makes dinner feel easy and satisfying. Loaded with flavorful beef, soft potatoes, green beans, and a rich tomato base, it all bakes together into a hearty meal the whole family will enjoy.
Ingredients:
1 1/2 pounds ground beef
4 medium potatoes, peeled and cut into cubes
1 can (14.5 ounces) green beans, drained, or 1 1/2 cups fresh or frozen green beans
1 small onion, chopped
2 garlic cloves, minced
1 can (15 ounces) tomato sauce
1 can (14.5 ounces) diced tomatoes with juices
1 cup shredded cheddar cheese
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
Chopped parsley for garnish, optional
Instructions:
Preheat oven to 375°F and lightly coat a 9x13-inch baking dish with cooking spray or oil.
Heat olive oil in a large skillet over medium-high heat. Add the ground beef and onion, cooking until the beef is browned and fully cooked, about 6–8 minutes. Drain excess grease if necessary.
Stir in the garlic, salt, pepper, garlic powder, onion powder, and paprika. Cook for another 30 seconds until fragrant.
Add the tomato sauce and diced tomatoes, stirring well. Let the mixture simmer for 3–4 minutes to blend the flavors.
Spread the diced potatoes across the bottom of the prepared baking dish. Layer the green beans over the potatoes, then pour the beef and tomato mixture evenly on top.
Cover tightly with foil and bake for 45 minutes. Remove the foil, sprinkle cheddar cheese over the casserole, and continue baking for another 10–15 minutes until the potatoes are soft and the cheese is melted and bubbly.
Garnish with parsley if desired and serve warm. Refrigerate leftovers for up to 3 days.
