High Protein Cheesy Beef Quesadilla

Ingredients

4 large high-protein flour tortillas
1 lb (500 g) lean ground beef
1 teaspoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1 teaspoon ground cumin
½ teaspoon chili powder
Salt and black pepper, to taste
2 cups shredded reduced-fat mozzarella cheese
1 cup shredded reduced-fat cheddar cheese
Cooking spray or a little butter, for cooking

Optional Avocado Cilantro Sauce

1 ripe avocado
½ cup plain Greek yogurt
¼ cup fresh cilantro
1–2 tablespoons fresh lime juice
1 garlic clove
Salt, to taste
Water, as needed

Instructions

Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it into small pieces as it browns.
Season with garlic powder, onion powder, smoked paprika, cumin, chili powder, salt, and black pepper. Cook until the beef is fully browned, then drain any excess grease.
Lay each tortilla flat and sprinkle mozzarella and cheddar over one half. Add a layer of seasoned beef and top with a little more cheese.
Fold the tortilla in half over the filling.
Lightly grease a skillet with cooking spray or butter. Cook each quesadilla over medium heat for 2–3 minutes per side, or until golden and crispy with completely melted cheese.
Let the quesadillas rest for 1–2 minutes before slicing into wedges.
For the optional sauce, blend avocado, Greek yogurt, cilantro, lime juice, garlic, and salt until creamy. Add a splash of water if needed to reach your preferred consistency.
Serve the High Protein Cheesy Beef Quesadillas warm with avocado cilantro sauce, salsa, guacamole, or your favorite toppings.

Tips

Don't overfill your tortillas or they'll be difficult to flip.
Use lean ground beef to prevent greasy quesadillas.
Keep the skillet over medium heat so the cheese melts before the tortilla gets too dark.
Add jalapeños or hot sauce if you prefer a spicy version.
Serve immediately for the crispiest texture and best cheese pull.
