Garlic Herb Sausage, Potatoes & Veggie Bake

This hearty sheet pan dinner combines smoky sausage, tender roasted potatoes, and colorful vegetables with a flavorful garlic herb butter seasoning. It's an easy, comforting meal that's perfect for busy weeknights and sure to become a family favorite.
Ingredients
1½ pounds smoked sausage, sliced into rounds
2 pounds baby potatoes, halved or quartered
3 cups broccoli florets
1 red bell pepper, chopped
1 small red onion, chopped
3 tablespoons olive oil
3 tablespoons melted butter
4 cloves garlic, minced
1 teaspoon Italian seasoning
1 teaspoon dried parsley
½ teaspoon smoked paprika
½ teaspoon garlic powder
½ teaspoon onion powder
1 teaspoon salt
½ teaspoon black pepper
¼ teaspoon crushed red pepper flakes (optional)
2 tablespoons chopped fresh parsley
Instructions
Preheat your oven to 400°F and lightly grease a large rimmed baking sheet or a 9x13-inch baking dish.
Add the potatoes, smoked sausage, broccoli, bell pepper, and red onion to the prepared pan.
In a small bowl, whisk together the olive oil, melted butter, minced garlic, Italian seasoning, dried parsley, smoked paprika, garlic powder, onion powder, salt, black pepper, and red pepper flakes, if using.
Drizzle the garlic herb mixture evenly over the sausage and vegetables. Toss everything together until well coated.
Arrange the mixture into a single, even layer to help the potatoes roast evenly.
Cover the pan loosely with aluminum foil and bake for 25 minutes.
Remove the foil, gently stir the ingredients, and continue baking uncovered for another 20 to 25 minutes, or until the potatoes are tender and the sausage is lightly browned.
For crispier edges, switch the oven to broil and cook for an additional 2 to 3 minutes, watching carefully to prevent burning.
Sprinkle with fresh parsley before serving. Enjoy with a crisp side salad, warm dinner rolls, or cornbread. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
