This one-pan garlic herb roasted chicken is juicy, flavorful, and surrounded by golden baby potatoes and tender green beans. It’s simple, wholesome, and perfect for an easy weeknight dinner with minimal cleanup!
🛒 Ingredients:
2 large boneless, skinless chicken breasts
1 tsp salt
½ tsp freshly ground black pepper
1 tsp dried Italian seasoning
4 garlic cloves, minced
½ tsp paprika
3 tbsp olive oil (divided)
1½ lbs baby Yukon gold potatoes, halved
½ tsp salt (for potatoes)
¼ tsp black pepper (for potatoes)
12 oz fresh green beans, trimmed
2 tbsp fresh parsley, chopped
👩‍🍳 Instructions:
1️⃣ Prep the Oven
Preheat oven to 400°F (200°C).
Lightly grease a large baking dish with 1 tbsp olive oil.
2️⃣ Season the Chicken
Mix salt, pepper, Italian seasoning, garlic, paprika, and 1 tbsp olive oil.
Rub mixture evenly over chicken.
Place chicken in center of baking dish.
3️⃣ Add the Potatoes
Toss potatoes with 1 tbsp olive oil, salt, and pepper.
Arrange around chicken in a single layer.
4️⃣ First Roast
Roast for 25 minutes.
Stir potatoes halfway through for even browning.
5️⃣ Add Green Beans
Add trimmed green beans, drizzle lightly with olive oil.
Return to oven and roast another 20–30 minutes, until chicken reaches 165°F (74°C) and potatoes are fork-tender.
6️⃣ Finish & Serve
Let rest 5 minutes.
Sprinkle with fresh parsley and serve warm.
