Garlic Butter Salmon and Veggies Sheet Pan

Ingredients
4 salmon fillets
2 cups broccoli florets
2 cups carrots
1 medium zucchini, sliced
1 large bell pepper, chopped
1 cup cherry tomatoes
4 tablespoons butter, melted
4–5 garlic cloves, minced
2 tablespoons fresh lemon juice
1–2 tablespoons olive oil
1 teaspoon Italian seasoning
½ teaspoon paprika
Salt, to taste
Black pepper, to taste
2 tablespoons fresh parsley, chopped
Lemon wedges, for serving
Instructions
Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper or lightly grease it.
Add the broccoli, zucchini, bell pepper, and cherry tomatoes to the sheet pan. Drizzle with olive oil and season lightly with salt and black pepper. Toss to coat and spread the vegetables into an even layer.
In a small bowl, combine the melted butter, minced garlic, lemon juice, Italian seasoning, paprika, salt, and black pepper.
Pat the salmon fillets dry and arrange them among the vegetables. If using skin-on salmon, place the fillets skin-side down.
Spoon or brush the garlic butter mixture generously over the salmon. Drizzle a little over the vegetables as well.
Bake for 12–18 minutes, or until the vegetables are tender and the salmon is cooked through. Cooking time may vary depending on the thickness of your fillets.
Remove the sheet pan from the oven. Spoon the flavorful pan juices over the salmon and sprinkle with fresh parsley.
Serve warm with fresh lemon wedges and your favorite side, such as rice, quinoa, potatoes, or crusty bread.
Tips
Cut your vegetables into similar-sized pieces so they cook evenly.
If using potatoes or carrots, roast them for 10–15 minutes before adding the salmon.
Add red pepper flakes or Cajun seasoning for a spicy version.
Don't overcrowd the sheet pan; give the vegetables room to roast.
Finish with extra lemon juice for a fresh, bright flavor.
Serving Suggestion: Serve with steamed rice, garlic rice, quinoa, mashed potatoes, or a fresh green salad.
