Ingredients
For the Garlic Butter Chicken
1½ lbs boneless, skinless chicken breasts or thighs
4 tablespoons unsalted butter, divided
1 tablespoon olive oil
4–5 garlic cloves, minced
1 teaspoon paprika
½ teaspoon garlic powder
½ teaspoon onion powder
Salt, to taste
Black pepper, to taste
2 tablespoons fresh parsley, chopped
For the Cheesy Parmesan Rice
1 cup long-grain white rice
2 cups chicken broth
2 tablespoons unsalted butter
2 garlic cloves, minced
½ cup heavy cream
1 cup freshly grated Parmesan cheese
Salt, to taste
Black pepper, to taste
Fresh parsley, for garnish
Extra Parmesan, for serving
Instructions
Season the chicken: Pat the chicken dry and season both sides with paprika, garlic powder, onion powder, salt, and black pepper.
Cook the chicken: Heat the olive oil and 2 tablespoons of butter in a large skillet over medium-high heat. Add the chicken and cook until golden on both sides and the center reaches 165°F. Transfer to a plate.
Make the garlic butter: Reduce the heat to medium-low. Add the remaining 2 tablespoons of butter and minced garlic to the same skillet. Cook for about 30–60 seconds until fragrant.
Coat the chicken: Return the chicken to the skillet and spoon the garlic butter over the top. Sprinkle with fresh parsley and keep warm.
Cook the rice: Melt 2 tablespoons of butter in a saucepan over medium heat. Add the garlic and cook briefly until fragrant. Stir in the rice and chicken broth.
Simmer: Bring to a gentle boil, then reduce the heat to low. Cover and cook until the rice is tender and the liquid has been absorbed, following your rice package directions if needed.
Make it cheesy: Stir the heavy cream and Parmesan into the cooked rice. Season with salt and black pepper. If the rice is too thick, add a splash of chicken broth or cream.
Serve: Spoon the cheesy Parmesan rice onto plates and top with the garlic butter chicken. Drizzle extra garlic butter from the skillet over everything.
Garnish: Finish with fresh parsley, extra Parmesan, and freshly cracked black pepper.
