French Onion Meatloaf with Gruyère Cheese

📝 Ingredients
Caramelized Onions
2 large yellow onions, thinly sliced
2 tbsp butter
1 tbsp olive oil
½ tsp salt
½ tsp sugar (optional, helps caramelization)
½ cup beef broth
Meatloaf
1½ lb (680 g) ground beef (80/20 works best)
2 large eggs
¾ cup breadcrumbs
½ cup milk
2 cloves garlic, minced
1 tbsp Worcestershire sauce
1 tsp dried thyme
½ tsp black pepper
½ tsp salt
Topping
1½ cups shredded Gruyère cheese
Fresh parsley, finely chopped (for garnish)
👩‍🍳 Instructions
1️⃣ Caramelize the Onions
Heat butter and olive oil in a skillet over medium heat.
Add onions and salt. Cook 20–25 minutes, stirring often, until deeply golden and soft.
Stir in sugar (if using), then add beef broth and simmer 5 minutes until slightly saucy.
Remove from heat and let cool slightly.
2️⃣ Prepare the Meatloaf
Preheat oven to 375°F (190°C).
In a large bowl, mix eggs, milk, breadcrumbs, garlic, Worcestershire sauce, thyme, pepper, and salt.
Add ground beef and half of the caramelized onions.
Mix gently until just combined (do not overmix).
3️⃣ Bake
Shape mixture into a loaf and place in a greased loaf pan or casserole dish.
Spoon remaining onions and their juices over the top.
Bake uncovered for 45 minutes.
4️⃣ Add Cheese
Remove from oven and top with Gruyère cheese.
Return to oven and bake 10–15 minutes, until cheese is melted and bubbly.
5️⃣ Rest & Serve
Let meatloaf rest 10 minutes before slicing.
Garnish with fresh parsley and serve hot.
