Ingredients
For the Meatloaf
2 pounds ground beef
8 slices Turkey bacon, cooked and crumbled
2 large eggs
3/4 cup breadcrumbs
1/2 cup whole milk
1 small onion, finely diced
3 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 teaspoon smoked paprika
1 teaspoon salt
1/2 teaspoon black pepper
1 cup shredded sharp cheddar cheese
1 cup shredded mozzarella cheese
1 cup shredded Pepper Jack cheese
Chopped green onions or parsley, optional for garnish
For the Firecracker Sauce
1/2 cup ketchup
1/4 cup hot sauce
3 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 tablespoon apple cider vinegar
1 clove garlic, minced
1/4 teaspoon red pepper flakes, optional
Instructions
1. Prepare the Bacon
Cook the bacon in an oven-safe skillet until crispy. Transfer it to a paper-towel-lined plate, then crumble it once cooled. Reserve some bacon for the final topping.
2. Preheat the Oven
Preheat your oven to 375°F (190°C). Carefully remove most of the excess bacon grease from the skillet.
3. Make the Meatloaf Mixture
Add the ground beef, eggs, breadcrumbs, milk, onion, garlic, Worcestershire sauce, smoked paprika, salt, black pepper, half of the crumbled bacon, and about 1/2 cup of the combined shredded cheeses to a large bowl.
Gently mix until everything is just combined. Avoid overmixing so your meatloaf stays tender.
4. Shape the Meatloaf
Shape the beef mixture into an even loaf in the center of your oven-safe skillet.
5. Make the Firecracker Sauce
In a small bowl, combine the ketchup, hot sauce, brown sugar, Worcestershire sauce, apple cider vinegar, garlic, and optional red pepper flakes.
Stir until smooth.
6. Add the First Layer of Sauce
Spread about half of the firecracker sauce evenly over the meatloaf.
7. Bake
Bake for about 45–55 minutes, then check the center with a meat thermometer.
8. Add the Triple Cheese Topping
Carefully remove the skillet from the oven. Spread the remaining firecracker sauce over the meatloaf.
Top generously with the remaining cheddar, mozzarella, and Pepper Jack cheese. Sprinkle the reserved crispy bacon over the cheese.
9. Finish Baking
Return the skillet to the oven and bake for another 10–15 minutes, or until the cheese is melted and bubbly and the center of the meatloaf reaches 160°F (71°C).
10. Rest and Serve
Let the meatloaf rest for about 10 minutes before slicing. Garnish with chopped green onions or parsley and serve warm.
