Easy Prawn Creole Recipe

Ingredients:

1 lb (450g) prawns (peeled and deveined)
2 tbsp olive oil or butter
1 medium onion (diced)
1 bell pepper (diced)
3 cloves garlic (minced)
1 can (14 oz) diced tomatoes (or 2 fresh tomatoes, chopped)
1 ½ tbsp Creole seasoning
½ tsp cayenne pepper (adjust to spice preference)
1 cup chicken broth or water
1 tbsp tomato paste (optional, for extra richness)
Salt and pepper to taste
Rice or cornbread (for serving)
Fresh parsley or green onions (for garnish)

Instructions:

Prep the Ingredients:
Peel and devein the prawns. Set aside.
Dice the onion and bell pepper. Mince the garlic and chop the tomatoes (if using fresh).
Cook the Base:
Heat olive oil or butter in a large skillet over medium heat.
Add the onions and garlic, sauté for 2-3 minutes until softened and fragrant.
Add the bell pepper and cook for another 3 minutes.
Stir in the diced tomatoes, Creole seasoning, and cayenne pepper. Cook for 5-7 minutes until the tomatoes break down and create a sauce.
Cook the Prawns:
Add the prawns to the skillet and stir to coat them in the sauce.
Pour in the chicken broth (or water), and tomato paste (if using). Bring the sauce to a simmer.
Cook for 3-5 minutes, or until the prawns turn pink and opaque. Be careful not to overcook.
Final Touches:
Taste the sauce and adjust seasoning with salt and pepper.
Serve the prawn creole over rice or with a side of cornbread.
Garnish with freshly chopped parsley or green onions.

Tips:

For extra texture, add okra or a splash of white wine to the sauce.
To adjust the spice level, reduce or increase the amount of cayenne pepper or hot sauce.
Frozen prawns work well, just be sure to thaw them properly before cooking.
