1 pound lean ground beef (85%–90%)
3 large russet potatoes, thinly sliced
1 green bell pepper, chopped
1 medium onion, chopped
1 can (14.5 ounces) diced tomatoes

½ teaspoon garlic powder
Fresh parsley for garnish

Instructions

Step 1: Prepare the Oven

Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.

Step 2: Brown the Beef

In a large skillet over medium heat, cook the ground beef until fully browned. Drain any excess grease and set aside.

Step 3: Prepare the Vegetables

Thinly slice the potatoes and chop the onion and bell pepper into small pieces.

Step 4: Layer the Casserole

Arrange a layer of sliced potatoes in the prepared baking dish. Add a portion of the browned beef, followed by onions, bell peppers, and diced tomatoes. Repeat the layers until all ingredients have been used.

Step 5: Bake

Cover the baking dish tightly with aluminum foil and bake for 1 hour.

Step 6: Finish Baking

Remove the foil and continue baking for 15 minutes, or until the potatoes are fork-tender and the casserole is bubbling around the edges.

Step 7: Rest and Serve

Allow the casserole to rest for 5 to 10 minutes before serving. Garnish with fresh parsley if desired.
