Custard-Filled Pastry Squares

Crisp, golden puff pastry layered with smooth vanilla custard and finished with powdered sugar. These Custard-Filled Pastry Squares are creamy, flaky, and perfect for holidays, parties, or an easy make-ahead dessert.

Ingredients
2 sheets puff pastry, thawed
3 cups whole milk
5 large egg yolks
¾ cup granulated sugar
⅓ cup cornstarch
2 tablespoons unsalted butter
2 teaspoons vanilla extract
Pinch of salt
1 cup heavy whipping cream, optional
Powdered sugar, for topping
Instructions
Preheat your oven to 400°F (200°C) and line baking sheets with parchment paper.
Place the puff pastry sheets on the prepared baking sheets. Lightly prick them with a fork.
Bake according to the package directions until the pastry is puffed, crisp, and golden brown. Let it cool completely.
Heat the milk in a saucepan over medium heat until hot but not boiling.
In a separate bowl, whisk together the egg yolks, sugar, cornstarch, and salt until smooth.
Slowly pour some of the warm milk into the egg mixture while whisking constantly.
Pour the mixture back into the saucepan and cook over medium to medium-low heat, whisking continuously until thick and creamy.
Remove from the heat and stir in the butter and vanilla extract.
Transfer the custard to a bowl and cover the surface directly with plastic wrap. Let it cool completely.
Place one cooled puff pastry sheet in a baking dish. Spread the custard evenly over the pastry.
Carefully place the second pastry sheet on top and gently press it into place.
Cover and refrigerate for at least 4 hours, or overnight for easier slicing.
Cut into squares using a sharp knife.
Dust generously with powdered sugar before serving.
Recipe Notes
Make sure the puff pastry is completely cool before adding the custard.
Cook the custard until noticeably thick so it holds its shape when sliced.
For cleaner squares, you can cut the top pastry sheet into portions before placing it over the custard.
Chill overnight if you want especially neat slices.
Keep leftovers covered and refrigerated.
For the best texture, enjoy the pastry squares within a few days.

Chocolate: Stir melted chocolate into the warm custard.
Lemon: Add fresh lemon zest for a bright citrus flavor.
