Ingredients
For the Salad
2 medium English cucumbers, sliced
2 ripe avocados, cubed
1 cup cherry tomatoes, halved
¼ cup red onion, thinly sliced
¼ cup fresh cilantro, chopped
For the Chili Lime Dressing
3 tablespoons fresh lime juice
2 tablespoons extra-virgin olive oil
½–1 teaspoon chili powder
1 teaspoon honey
1 garlic clove, minced
Salt, to taste
Black pepper, to taste
Instructions
Prepare the vegetables: Slice the cucumbers, halve the tomatoes, thinly slice the red onion, and chop the cilantro.
Make the dressing: Whisk together lime juice, olive oil, chili powder, honey, garlic, salt, and black pepper.
Combine: Add cucumber, tomatoes, red onion, and cilantro to a large bowl.
Add avocado: Gently fold in the cubed avocado.
Dress the salad: Pour the chili lime dressing over the salad and gently toss until everything is lightly coated.
Serve: Taste and adjust the lime, salt, or chili if needed. Serve immediately for the freshest flavor and texture.
Notes
Use ripe but firm avocados so they don't become mushy.
Add jalapeño or cayenne for extra heat.
For a heartier meal, add grilled shrimp, chicken, salmon, chickpeas, or black beans.
For meal prep, keep the avocado and dressing separate until you're ready to serve.
Feta or cotija cheese makes a delicious optional addition.
