Crockpot Sausage and Potatoes

πŸ›’ Ingredients (Serves 6)
2 lbs baby potatoes (gold or red)
14 oz smoked sausage, sliced into rounds
3 tbsp olive oil
3 cloves garlic, minced
1 tsp Italian seasoning
Β½ tsp smoked paprika
1 tsp salt
Β½ tsp black pepper
2 tbsp chopped fresh parsley
2 tbsp butter, cubed
Optional:
ΒΌ tsp red pepper flakes (for heat)

Prep the base. Add baby potatoes to the slow cooker.
Season. In a bowl, toss potatoes and sausage with olive oil, garlic, Italian seasoning, paprika, salt, and pepper.
Layer & butter. Pour everything into the slow cooker and dot with butter on top.
Cook. Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours, until potatoes are fork-tender.
Finish. Stir gently, sprinkle with fresh parsley, and serve warm.
