1/4 cup cornstarch
1 tsp salt
1/2 tsp black pepper, freshly ground
2 eggs, beaten
1 cup panko breadcrumbs
For the Bang Bang Sauce:
1/2 cup mayonnaise
3 tbsp sweet chili sauce
1-2 tsp sriracha (adjust to taste)
1 tsp honey (optional)
1 tsp fresh lime juice
Instructions
1. Prepare the Salmon
Cut salmon fillets into bite-sized cubes.
Pat dry with paper towels to remove excess moisture.
Season lightly with salt and black pepper.
2. Coat the Salmon
Mix flour and cornstarch in a shallow bowl.
Dip salmon cubes into the flour-cornstarch mixture.
Dip into beaten eggs.
Coat evenly with panko breadcrumbs.
3. Fry the Salmon
Heat oil in a deep pan to 350°F (175°C).
Fry salmon bites in small batches for 3-4 minutes per side, until golden brown.
Drain on paper towels to remove excess oil.
4. Prepare the Bang Bang Sauce
In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice.
Adjust spiciness to taste.
5. Serve
Drizzle the bang bang sauce over the fried salmon bites.
Garnish with chopped green onions or sesame seeds.
Serve with steamed rice, noodles, or as an appetizer.
Tips for Perfect Bites
Use fresh salmon for the best flavor and texture.
Make sure oil is hot enough before frying to keep bites crispy.
Fry in small batches; overcrowding makes them soggy.
For a healthier option, bake or use an air fryer instead of deep-frying.
