Creamy Lemon Pepper Chicken Bites

Ingredients
2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
½ cup all-purpose flour
Salt, to taste
1 teaspoon freshly cracked black pepper
3 tablespoons butter
1 cup heavy cream
½ cup chicken broth
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
1 tablespoon Dijon mustard or whole grain mustard
Fresh parsley, chopped, for garnish
Instructions
Pat the chicken pieces dry with paper towels, then season them with salt and black pepper.
Lightly coat the chicken with the flour, shaking off any excess.
Melt the butter in a large skillet over medium-high heat.
Add the chicken in a single layer and cook for 5–6 minutes without moving it, allowing it to develop a golden-brown crust.
Flip the chicken and cook for another 3–4 minutes until nearly cooked through. Transfer the chicken to a plate.
Reduce the heat to medium and pour the chicken broth into the skillet. Scrape up the browned bits from the bottom of the pan with a wooden spoon.
Stir in the heavy cream, Dijon mustard, lemon juice, lemon zest, and cracked black pepper. Simmer gently for 3–5 minutes until the sauce begins to thicken.
Return the chicken to the skillet and stir until each piece is coated in the creamy lemon sauce.
Simmer for another 3–5 minutes, or until the chicken is fully cooked and the sauce reaches your desired consistency.
Taste and adjust the seasoning with additional salt, pepper, or lemon juice if needed.
Garnish with freshly chopped parsley and serve immediately.
Notes
Boneless, skinless chicken thighs stay juicier than chicken breasts, but either can be used.
Fresh lemon juice and zest provide the brightest flavor.
Avoid boiling the sauce to keep it smooth and creamy.
Add a splash of chicken broth or heavy cream when reheating leftovers to loosen the sauce.
For extra richness, stir in ½ cup grated Parmesan cheese before serving.
