Cowboy Steak Bites

Ingredients:
For the Cowboy Steak Bites:
1 lb ribeye steak, cut into bite-sized pieces
Salt & black pepper, to taste
For the Cowboy Butter:
1 stick unsalted butter
2 tsp paprika
½ tsp cayenne pepper
1 tsp chili flakes
2 cloves garlic, crushed
1 tbsp Dijon mustard
1 tbsp chopped chives
½ tbsp chopped parsley
Zest and juice of 1 lemon
1 tsp salt
½ tsp black pepper
For the Mashed Potatoes & Onions:
4 large russet potatoes, peeled and cubed
4–5 cloves roasted garlic
¼ cup butter
¼ cup milk
2 medium yellow onions, thinly sliced
1 tbsp olive oil or butter
Instructions:
Make the Cowboy Butter:
Melt 1 stick of unsalted butter in a small saucepan over low heat.
Whisk in paprika, cayenne pepper, chili flakes, crushed garlic, Dijon mustard, chives, parsley, lemon zest and juice.
Add salt and black pepper, and whisk until smooth and fragrant. Keep warm.
Prepare the Mashed Potatoes:
Boil peeled and cubed russet potatoes in salted water for about 15 minutes, until fork-tender.
Drain the potatoes, then mash with roasted garlic, butter, and milk until creamy.
Season with salt and pepper to taste. Set aside.
Caramelize the Onions:
Heat 1 tablespoon olive oil or butter in a skillet over medium heat.
Add sliced onions and cook for 15-20 minutes, stirring occasionally, until golden brown and caramelized.
Remove from heat and set aside.
Cook the Steak Bites:
Heat a large skillet over high heat. Add steak bites in a single layer.
Sear for 2–3 minutes per side, until browned and crusty. Season with salt and pepper while cooking.
Remove from heat and immediately toss the steak bites in the warm cowboy butter.
Assemble the Dish:
Spoon the mashed potatoes onto serving plates.
Top with the steak bites, drizzle with extra cowboy butter, and garnish with caramelized onions.
