Ingredients:For the Cowboy Steak Bites:1 lb ribeye steak, cut into bite-sized piecesSalt & black pepper, to tasteFor the Cowboy Butter:1 stick unsalted butter2 tsp paprika½ tsp cayenne pepper1 tsp chili flakes2 cloves garlic, crushed1 tbsp Dijon mustard1 tbsp chopped chives½ tbsp chopped parsleyZest and juice of 1 lemon1 tsp salt½ tsp black pepperFor the Mashed Potatoes & Onions:4 large russet potatoes, peeled and cubed4–5 cloves roasted garlic¼ cup butter¼ cup milk2 medium yellow onions, thinly sliced1 tbsp olive oil or butterInstructions:Make the Cowboy Butter:Melt 1 stick of unsalted butter in a small saucepan over low heat.Whisk in paprika, cayenne pepper, chili flakes, crushed garlic, Dijon mustard, chives, parsley, lemon zest and juice.Add salt and black pepper, and whisk until smooth and fragrant. Keep warm.Prepare the Mashed Potatoes:Boil peeled and cubed russet potatoes in salted water for about 15 minutes, until fork-tender.Drain the potatoes, then mash with roasted garlic, butter, and milk until creamy.Season with salt and pepper to taste. Set aside.Caramelize the Onions:Heat 1 tablespoon olive oil or butter in a skillet over medium heat.Add sliced onions and cook for 15-20 minutes, stirring occasionally, until golden brown and caramelized.Remove from heat and set aside.Cook the Steak Bites:Heat a large skillet over high heat. Add steak bites in a single layer.Sear for 2–3 minutes per side, until browned and crusty.
