Ingredients
For the Graham Cracker Crust
2 cups graham cracker crumbs
½ cup unsalted butter, melted
2 tablespoons granulated sugar
For the Cream Cheese Layer
8 oz cream cheese, softened
1 cup powdered sugar
2 cups whipped topping, thawed
For the Coconut Cream Layer
2 packages (3.4 oz each) coconut cream instant pudding mix
3 cups cold whole milk
½ cup sweetened shredded coconut
For the Topping
Remaining whipped topping
½ cup toasted shredded coconut
Instructions
Prepare the crust: Combine the graham cracker crumbs, melted butter, and sugar in a bowl. Mix until evenly moistened.
Press the crust: Transfer the mixture to a 9×13-inch baking dish. Press firmly and evenly across the bottom. Refrigerate while preparing the filling.
Make the cream cheese layer: Beat the softened cream cheese and powdered sugar until smooth and creamy. Gently fold in 2 cups of whipped topping.
Add the cream cheese layer: Carefully spread the cream cheese mixture over the chilled graham cracker crust.
Prepare the coconut pudding: Whisk the coconut cream instant pudding mix with the cold milk for about 2 minutes, or until thickened. Fold in the shredded coconut.
Add the coconut layer: Spread the coconut pudding evenly over the cream cheese filling.
Add the topping: Gently spread the remaining whipped topping over the coconut pudding layer.
Garnish: Sprinkle toasted coconut evenly over the top.
Chill: Cover and refrigerate for at least 4–5 hours, or preferably overnight, until the layers are firm.
Serve: Slice into squares and serve chilled. Add extra toasted coconut on top if desired.
Notes
Make sure your cream cheese is softened to prevent lumps.
Use cold milk to help the instant pudding thicken properly.
For cleaner slices, chill the dessert overnight and wipe your knife between cuts.
You can substitute crushed vanilla wafers for the graham cracker crust.
Add toasted coconut shortly before serving if you prefer a crunchier topping.
Keep leftovers covered and refrigerated.
