Ingredients:8 large flour tortillas1 lb (450 g) ground beef1 cup pizza sauce (or marinara sauce)1 ½ cups shredded mozzarella cheese1 cup shredded cheddar cheese½ cup mini pepperoni slices (plus extra for topping)½ teaspoon garlic powder½ teaspoon Italian seasoningSalt and black pepper, to taste1 tablespoon olive oilFresh parsley or basil (optional, for garnish)Instructions:Preheat oven to 375°F (190°C). Lightly grease a baking dish.Cook the ground beef: Heat olive oil in a skillet over medium heat. Add ground beef, season with salt, pepper, garlic powder, and Italian seasoning. Cook until browned, about 6-8 minutes. Drain excess grease.Add pizza sauce & pepperoni: Stir pizza sauce into the cooked beef, then mix in half of the pepperoni slices. Simmer for 3-4 minutes, then remove from heat.Assemble the enchiladas: Spoon beef mixture down the center of each tortilla. Sprinkle with mozzarella and cheddar cheese. Roll tightly and place seam-side down in the baking dish.Top & bake: Spoon extra pizza sauce over the enchiladas. Sprinkle remaining cheese and pepperoni on top.
