Cheesy Pizza Enchiladas with Pepperoni & Beef

Ingredients:
8 large flour tortillas
1 lb (450 g) ground beef
1 cup pizza sauce (or marinara sauce)
1 ½ cups shredded mozzarella cheese
1 cup shredded cheddar cheese
½ cup mini pepperoni slices (plus extra for topping)
½ teaspoon garlic powder
½ teaspoon Italian seasoning
Salt and black pepper, to taste
1 tablespoon olive oil
Fresh parsley or basil (optional, for garnish)
Instructions:
Preheat oven to 375°F (190°C). Lightly grease a baking dish.
Cook the ground beef: Heat olive oil in a skillet over medium heat. Add ground beef, season with salt, pepper, garlic powder, and Italian seasoning. Cook until browned, about 6-8 minutes. Drain excess grease.
Add pizza sauce & pepperoni: Stir pizza sauce into the cooked beef, then mix in half of the pepperoni slices. Simmer for 3-4 minutes, then remove from heat.
Assemble the enchiladas: Spoon beef mixture down the center of each tortilla. Sprinkle with mozzarella and cheddar cheese. Roll tightly and place seam-side down in the baking dish.
Top & bake: Spoon extra pizza sauce over the enchiladas. Sprinkle remaining cheese and pepperoni on top. Bake uncovered for 25-30 minutes until bubbly and golden.
Finish & serve: Garnish with chopped parsley or basil if desired. Serve hot and cheesy!
