Cheesy Mushroom Beef Rolls

Tender slices of beef are filled with buttery garlic mushrooms and gooey mozzarella, then cooked in a rich, savory sauce. These Cheesy Mushroom Beef Rolls make a hearty dinner that pairs perfectly with vegetables, cauliflower mash, or a fresh salad.
Ingredients
6 thin beef steak slices, such as sirloin or top round
1½ cups mushrooms, sliced
6 mozzarella cheese sticks or 1½ cups shredded mozzarella
2 tablespoons butter
2 cloves garlic, minced
1 tablespoon olive oil
1 cup beef broth
2 tablespoons Worcestershire sauce
1 tablespoon soy sauce
1 teaspoon Italian seasoning
½ teaspoon paprika
Salt and black pepper, to taste
1 tablespoon cornstarch mixed with 2 tablespoons water, optional
Instructions
1. Season the beef:
Lay the beef slices flat and season both sides with salt, black pepper, paprika, and Italian seasoning.
2. Sauté the mushrooms:
Melt the butter in a skillet over medium heat. Add the sliced mushrooms and cook for about 5–6 minutes, stirring occasionally, until tender and golden.
Stir in the minced garlic and cook for another 30 seconds. Remove the skillet from the heat.
3. Assemble the beef rolls:
Divide the sautéed mushrooms between the beef slices. Place a mozzarella stick or a portion of shredded mozzarella on each piece.
Roll each beef slice tightly around the filling. Secure with toothpicks if necessary.
4. Sear the rolls:
Heat the olive oil in a skillet over medium-high heat. Add the beef rolls and sear for 2–3 minutes per side, until nicely browned on the outside.
5. Prepare the sauce:
Combine the beef broth, Worcestershire sauce, and soy sauce. Pour the mixture around the browned beef rolls.
Add any leftover sautéed mushrooms to the pan.
6. Bake until tender:
Transfer the beef rolls and sauce to a baking dish, or keep everything in the skillet if it's oven-safe.
Cover with foil and bake at 350°F (175°C) for 30–35 minutes, or until the beef is cooked and tender.
7. Thicken the sauce, if desired:
For a thicker sauce, stir together the cornstarch and water. Add the mixture to the hot sauce and simmer for 2–3 minutes, stirring until it reaches your desired consistency.
Serve
Serve the Cheesy Mushroom Beef Rolls hot with plenty of the savory mushroom sauce spooned over the top. Pair them with mashed cauliflower, roasted vegetables, or a crisp salad for a satisfying low-carb dinner.
