Cheesy Ham and Potato Casserole Recipe

Ingredients

4 to 5 cups potatoes, peeled and thinly sliced or diced
2 cups cooked ham, cut into bite-size cubes
2 to 3 cups shredded cheddar cheese
1½ cups milk or light cream
3 tablespoons butter
1 small onion, finely chopped (optional)
Salt and black pepper, to taste

Instructions

Preheat your oven to 350°F (180°C) and lightly grease a baking dish.
Arrange half of the potatoes evenly in the bottom of the dish.
Sprinkle half of the ham over the potatoes, followed by one cup of cheese.
Repeat the layers with remaining potatoes, ham, and cheese.
In a small saucepan, melt the butter over medium heat. Add onion if using and cook until soft. Stir in milk, season lightly with salt and pepper, and heat until warm.
Pour the warm sauce evenly over the casserole.
Cover with foil and bake for 45–50 minutes, until potatoes are tender.
Remove foil and bake for another 15–20 minutes until the top is golden and bubbly.
Let rest for 10 minutes before serving.

Notes

For faster cooking, parboil the potatoes for 5 minutes before layering.
Freshly shredded cheese melts better than pre-shredded.
Adjust salt carefully since ham can be salty.

Storage

Store leftovers in an airtight container in the refrigerator for up to 4 days. Freeze for up to 2 months.

Reheating

Reheat covered in the oven at 325°F (160°C) or microwave with a splash of milk to keep it creamy.
