Ingredients
1 lb large shrimp, peeled and deveined
1 red onion, sliced into rings
1 green bell pepper, sliced into strips
2 carrots, cut into thin sticks
2 tablespoons olive oil
4 tablespoons butter, cut into small cubes
1 cup shredded mozzarella cheese
1 teaspoon dried oregano
1 teaspoon salt
½ teaspoon black pepper
Fresh chopped parsley, for garnish (optional)
Lemon wedges, for serving (optional)
Instructions
Preheat your oven to 400°F (200°C) or heat your grill to medium-high.
Cut four large sheets of heavy-duty aluminum foil.
Drizzle a little olive oil into the center of each sheet.
Divide the sliced onion, bell pepper, and carrots evenly among the foil sheets.
Season the vegetables with oregano, salt, and black pepper.
Arrange the shrimp evenly over the vegetables.
Scatter the butter cubes over the shrimp.
Sprinkle the shredded mozzarella cheese evenly over each packet.
Fold the foil tightly around the ingredients, sealing all edges to create secure packets while leaving a little room inside for steam.
Place the packets on a baking sheet and bake for 15–18 minutes, or grill for 12–15 minutes, until the shrimp are pink and fully cooked and the vegetables are tender.
Carefully open the packets, watching for hot steam.
Garnish with fresh parsley and serve with lemon wedges, if desired.
Notes
Pat the shrimp dry before cooking to prevent excess moisture.
Cut the vegetables into similar-sized pieces for even cooking.
Freshly shredded mozzarella melts more smoothly than pre-shredded cheese.
