Cheesy Baked Burrito Casserole

This Cheesy Baked Burrito Casserole is hearty, saucy, and loaded with melted cheese. Seasoned ground beef, tortillas, beans, and rice are layered with enchilada sauce for an easy comfort food dinner.
Ingredients:
1 pound ground beef
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 packet taco seasoning
1/2 cup water
1 can refried beans, 16 ounces
1 cup cooked rice
1 can red enchilada sauce, 10 ounces
6 large flour tortillas
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 cup diced tomatoes
1 tablespoon chopped cilantro, optional
Instructions:
Preheat oven to 375°F. Grease a 9x13-inch baking dish.
Heat olive oil in a skillet over medium heat. Add ground beef and onion, then cook for 6 to 8 minutes until browned. Drain excess grease if needed.
Stir in garlic, taco seasoning, and water. Cook for 2 to 3 minutes until thickened.
Spread a little enchilada sauce in the bottom of the baking dish.
Layer tortillas, refried beans, rice, beef mixture, enchilada sauce, and cheese in the dish. Repeat layers until ingredients are used.
Top with remaining cheddar and Monterey Jack cheese.
Bake uncovered for 20 to 25 minutes until hot, bubbly, and melted.
Top with diced tomatoes and cilantro if using. Let rest for 5 minutes before serving. Store leftovers in the fridge for up to 3 days.
