Description

Ingredients
For the Cake
2 cups all-purpose flour
1 cup granulated sugar
1 (14-ounce) can sweetened condensed milk
1 cup whole milk
1 cup coconut milk
3 large eggs
½ cup unsalted butter, melted
1 teaspoon vanilla extract
¼ teaspoon salt
For the Coconut Topping
1 cup coconut milk
½ cup sweetened condensed milk
1 cup shredded coconut
1 tablespoon unsalted butter
½ teaspoon vanilla extract
Instructions
Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish.
In a large bowl, whisk together the eggs, whole milk, coconut milk, sweetened condensed milk, melted butter, and vanilla.
In a separate bowl, combine the flour, sugar, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing just until the batter is smooth.
Pour the batter into the prepared baking dish and spread it evenly.
Bake for 40–50 minutes, or until the top is lightly golden and the center is set.
While the cake bakes, combine coconut milk, condensed milk, shredded coconut, butter, and vanilla in a saucepan.
Cook over medium-low heat, stirring frequently, until the coconut topping is warm and slightly thickened.
Remove the cake from the oven and spread the coconut topping evenly over the warm cake.
Allow the cake to cool and set before slicing. Serve slightly warm or refrigerate and enjoy chilled.
