Ingredients

1½ lbs ground beef
1 medium head green cabbage
1 medium onion, finely diced
3 garlic cloves, minced
1 tablespoon Worcestershire sauce
1 teaspoon paprika
1 teaspoon garlic powder
½ teaspoon onion powder
¾ teaspoon salt
½ teaspoon black pepper
2 tablespoons olive oil
1½ cups shredded cheddar cheese
1 tablespoon chopped fresh parsley, optional

Instructions

Preheat the oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.
Prepare the cabbage: Remove the damaged outer leaves and cut the cabbage into thick rounds. Arrange them in a single layer on the prepared baking sheet.
Season the cabbage: Brush both sides lightly with olive oil and season with a little salt and black pepper.
Prepare the beef: Add the ground beef, diced onion, garlic, Worcestershire sauce, paprika, garlic powder, onion powder, salt, and pepper to a large bowl. Mix gently until combined without overworking the meat.
Shape the burgers: Divide the beef mixture into 6 equal portions. Shape each portion into a patty that fits over a cabbage round.
Assemble: Place one beef patty on top of each cabbage round. Leave enough space between each burger so the cabbage can roast rather than steam.
Bake: Bake for 20–25 minutes, or until the cabbage is tender and lightly browned and the ground beef reaches an internal temperature of 160°F (71°C).
Add the cheese: Sprinkle shredded cheddar over each burger during the final 3–5 minutes of baking. Return to the oven until melted.
Serve: Garnish with fresh parsley and serve hot with your favorite burger sauce, pickles, mustard, ketchup, or other toppings.

Tips

Use 80/20 or 85/15 ground beef for juicy burgers.
Cut the cabbage rounds evenly so they cook at roughly the same rate.
Don't overcrowd your baking sheet or the cabbage may become watery.
Pepper Jack, Swiss, Monterey Jack, or mozzarella can replace cheddar.
Add jalapeños or crushed red pepper if you prefer spicy Cabbage Burgers.

Storage

Store leftover Cabbage Burgers in an airtight container in the refrigerator for up to 3–4 days. Reheat thoroughly in the oven, air fryer, or microwave.

Serving Suggestions

Serve your Cabbage Burgers with roasted potatoes, French fries, sweet potato wedges, green beans, corn on the cob, or a fresh side salad.
