Line a baking dish with foil for easy cleanup.Season the beef tenderloin with salt, pepper, garlic powder, and paprika. Place in the center of the baking dish.Make the glaze by mixing brown sugar, Dijon mustard, soy sauce, apple cider vinegar, and olive oil. Brush generously over the beef.Prepare the apples by tossing them with melted butter, brown sugar, and cinnamon. Arrange around the beef.Bake uncovered for 50–60 minutes, or until internal temperature reaches 145°F. Baste once or twice with pan juices for extra flavor.Rest 10 minutes before slicing.
