Brown Sugar Glazed beef tenderloin with Cinnamon Apples

🛒 Ingredients
For the beef tenderloin:
2½–3 lb boneless beef tenderloin
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp paprika
½ cup brown sugar
2 tbsp Dijon mustard
2 tbsp soy sauce
1 tbsp apple cider vinegar
1 tbsp olive oil
For the Apples:
3–4 large apples, peeled and sliced thick
2 tbsp melted butter
2 tbsp brown sugar
½ tsp cinnamon
👩‍🍳 Instructions
Preheat oven to 375°F. Line a baking dish with foil for easy cleanup.
Season the beef tenderloin with salt, pepper, garlic powder, and paprika. Place in the center of the baking dish.
Make the glaze by mixing brown sugar, Dijon mustard, soy sauce, apple cider vinegar, and olive oil. Brush generously over the beef.
Prepare the apples by tossing them with melted butter, brown sugar, and cinnamon. Arrange around the beef.
Bake uncovered for 50–60 minutes, or until internal temperature reaches 145°F. Baste once or twice with pan juices for extra flavor.
Rest 10 minutes before slicing. Spoon extra glaze and apples over each serving.
🍽️ Serving Suggestions
Serve with mashed potatoes, roasted green beans, or warm dinner rolls. It also makes amazing leftovers for sandwiches the next day.
