Broccoli Cheese Soup

This creamy, comforting Broccoli Cheese Soup is rich, velvety, and packed with tender broccoli and sharp cheddar — the perfect cozy bowl for chilly days.
Ingredients
• 4 cups broccoli florets, chopped
• 2 tablespoons unsalted butter
• 1 small onion, finely diced
• 2 cloves garlic, minced
• 4 tablespoons all-purpose flour
• 4 cups chicken or vegetable broth
• 2 cups whole milk
• 2 cups shredded cheddar cheese
• ½ cup grated Parmesan cheese
• ¼ teaspoon ground nutmeg
• Salt and black pepper, to taste
• Crusty bread or croutons, for serving

Directions
In a large pot over medium heat, melt butter and sauté onion until soft. Add garlic and cook 30 seconds. Stir in flour and cook for 1–2 minutes to form a roux. Gradually whisk in broth, then add broccoli and simmer 10–15 minutes until tender. Stir in milk and simmer gently. Blend partially for a creamy texture if desired. Reduce heat and stir in cheddar and Parmesan until melted and smooth. Season with nutmeg, salt, and pepper.
