Air Fryer Cauliflower

Ingredients:
1 small head of cauliflower, chopped into bite-sized florets
1/2 cup shredded cheddar or mozzarella cheese
1/4 cup grated Parmesan cheese
1 large egg
2 to 3 tablespoons breadcrumbs or crushed crackers
1/2 teaspoon garlic powder
Salt and black pepper, to taste
Pinch of chili flakes (optional)
Instructions:
Lightly steam or microwave the cauliflower until just tender but not mushy. It should still keep some texture. Allow it to cool slightly, then pat it dry with paper towels.
Transfer the cauliflower to a mixing bowl and gently mash it, leaving a few small chunks for texture. Add the egg, shredded cheese, Parmesan, breadcrumbs, garlic powder, salt, pepper, and chili flakes if using. Mix everything together until the mixture holds when pressed.
Scoop small portions of the mixture and form them into small patties or uneven bite-sized clusters. They do not need to look perfect.
Line the air fryer basket with parchment paper or lightly spray it with oil. Arrange the cauliflower bites in a single layer.
Cook at 375°F (190°C) for 10–12 minutes, turning halfway through, until the outside is crispy and golden brown.
Let the bites rest for a minute or two before serving so they can firm up slightly.
